Chicken burrito bowls with a nutrient boost!

This delicious recipe is so quick & easy to make and your family will love it! Chimichurri chicken burrito bowls with a healthy twist! (Serves 4)

What you'll need:

 

 

-4 thin sliced chicken breasts
-2 cups of white rice (I use jasmine)
-Cilantro
-1 red onion
-Corn
-1 tomato
-Shredded cheddar cheese
-Sour cream
-Chimichurri
-Corn tortillas
-Salt & pepper
-Olive oil
Directions:
1) First season your chicken breasts with chimichurri, salt, pepper & set aside.
2) To make the rice: heat up 1 tsp of olive oil in a pot, add the 2 cups of rice & toast the rice. Add salt to taste & 2 tsp of turmeric & ginger sea moss gel. Add 4 cups of filtered water & bring to a boil on high heat. Once the water comes to a boil, put the flame on the lowest setting, cover the pot & cook for 20 mins. 
3) While the rice is cooking add 2 tbsp of olive oil to a large skillet on medium-high heat & cook your chicken breast for about 3 minutes per side until done (depending on the thickness).
4) Dice up your cooked chicken breasts and set aside.
5) Finely dice tomato, red onion, cilantro, corn and combine in a bowl. 
6) Slice up a few corn tortillas into thin strips and fry until crispy.
7) Now it's time to assemble the bowls: Add your rice, chicken, diced tomato, cilantro & red onion mixture, sour cream, guacamole & freshly fried tortilla strips.
